1. If you are new in this world, the best program I know is simply aome
kind of plain text processor.
2. My experience with XML and EAD has been extremely positive. You have
some good examples in the EAD help pages.
3. You can start with the cookbook. It's exactly that: a cookbook: easy
for novices, helpful and similar to a basic library.
