I prefer defaulting to unanchored, with anchoring characters personally.
If you want anchoring then say so, rather than having to say that you
don't want anchoring every time.
More convincingly, if the default is anchored, then it's 'complete field'
rather than somewhere in the field as the end is anchored as well. Most
searches will not be complete field searche so the default should be
unanchored.
