"Sacred Visions" is an anthology of SF stories that deal with religious
themes. It was edited by Andrew Greeley and Michael Cassutt.
"Extraterrestrials: where are they?" is a collection of essays exploring
the Fermi paradox, edited by Ben Zuckerman and Michael Hart. I don't know
if any of the essays deal with theological issues, but it might be worth a
look.
