If I am understanding you correctly, you have "sub-items" in a folder
you want to give in EAD but the did only allows you the "folder
heading". Upon that assumption I have the following recomendations.
Series level coding:

Take a look at the best practices guide for the Library of Congress.
Many of the examples are what you are talking about. You can cut and
paste and then add your text (edit), etc.
