  I'm not aware of a list, but I'd love to see one if you put one together.

  At LSU, I cover DACS pretty heavily in Archives 101, and link it
conceptually to EAD.

  In "Electronic Description of Archival Material (EDAM)" I cover the MEP
extension of TEI, EAD and MARC.  In that class students must markup a
letter using MEP/TEI and develop a stylesheet for it. With that experience
they get the basics of XML (we use oXygen as an editor) and a DTD. The next
project has them markup an inventory to RLG BPG specifications above
"optional," then create a stylesheet and a MARC record for both the
inventory and the letter.

  This fall semester, I'm leading a seminar in advanced arrangement and
description. In that we'll look at more conceptual issues in A&D, including
users' information seeking behavior and human-computer interface issues.
While EAD will not be a focus, per se, it will no doubt appear as part of
the conversations we have: most of the students registered so far have
already had EDAM.

  One more thing: LSU participates in the SAEC <
http://slis.lsu.edu/saec/saec.html > and so students from Auburn's history
department, UKy.'s SLIS, MTSU's public history program, and Indiana U's
SLIS take EDAM along with the LSU students in real-time classes using video
conferencing. That may influence your count.
