My brief analysis is that they overlap only to the extent that, like EAD, EpiDoc has a header structure based on on the TEI header.
Otherwise they seem to occupy different information spaces.
EAD, like MARC, MODS, and METS, contains descriptive metadata about document-like objects (largely), whereas EpiDOc, like TEI and DocBook, is principally a schema for the electronic representation of the text of the documents themselves.
