Audacity should be able to be set up to record in either stereo or mono.
There will be a page with check boxes for this. Are you familiar with this?
It may be set to "mono" in which case it may record only the left input and
play that back through both speakers.
If it's set to record in stereo you should have a stereo record level
indicator (two indicators, not one).
Silly question but have you read the basic instructions for recording in
Audacity?
