Jeanine's comment reminds me that any of Larry Niven's _Ringworld_
stories are about a world where only one side of the planet faces the sun
(the inside!). I can't think of any fictions involving Dyson spheres,
but they'd qualify too. In fact you could push the definition to the
screaming point and say that "hollow Earth" stories (like Burrough's
Pellucidar) qualify...
