Hi David,

The simplest explanation of pH is that it is a measure of acidity &
basicity.  The scale is logarithmic from 0-14 with 7 being neutral.

pH6 is slightly acidic
pH8 is slightly basic (caustic)

If memory serves ph4-5 is typical of common vinegars.
