... by the search server, or how does it say to the object server which
record schema it wants them in? Or if the object server only returns one
schema, then it must get mapped into different schemas at the search
server.  Also sorting of any type would need to happen at the search
server.

Or, ... by the client, using the (metadata) record from the search server.
