I was reading your question and thought I would give some simple feedback.
If the students are already trained to do the work, then you should be able
to get about 50 or more pages per week, per person.  In my process or
converting finding aids into EAD, I produced about 100 or more pages in a
months time, but I was working a full 40 hr week. And all 100 pages could be
a combination of 2-3 different finding aids.   Also, take into consideration
the steps involved in the conversion, OCR and converting the pages into
editable format, for the most part , was the most time consuming between the
beginning and the finished product.  I hope this was somewhat helpful
