Here at Kent State we (Marcia Zeng and I) teach a Metadata course covering the following schemas and topics:
DC, MODS (and background on the entire MARC family), EAD, PREMIS, CDWA, VRA, education-related schemas (LOM, GEM, DC-ed), METS, value space standards (vocabularies), RDF, OAI, how to create crosswalks and application profiles, registries, and they also get to learn and use ContentDM.

Not all of the above have equal coverage. We spend more time on the more commonly used schemas than others.

Since our cataloging & classification course covers MARC21, and vocabularies such as LCSH, DDC and LCC we do not spend much time on these in the Metadata course.

Ive attended two different workshops recently for librarians on Metadata for
ContentDM which had basic exercises and also helpful information on using
the standard vocabularies with metadata etc   Many libraries are using more
than Dublin Core with projects these days as you all know, so am interested
to hear how and where it's being included.  In terms of digital library
collections esp. you will hear many in the audiences and presenters saying
"I used to be a cataloger but now I call myself ...."  :-)
