My experience is that applying the de-emphasis in the analog and digital world sounds the same (and the filters in, at least, Audition have the same phase characteristics as analog filters), but that recording flat allows you to apply click-reduction (e.g., iZotope Rx) with fewer artifacts. YMMV, of course.
