Hi, John, Dan Johnson at United Archiving in Hollywood can do a stack of five ADATs (40 tracks) http://www.unitedrecordingstudios.com/archiving Dan has become my go-to recommendation for a wide variety of digital transfers, though I still do "regular" DATs, PCM-F1 on VHS and Betamax, and some MD. Dave Pascoe at Flume Archiving in Toronto does ADAT as well...I don't know to what depth (track count), but it doesn't really matter as you can always sync up the clusters of 8 in post, but it's easier not to have to. https://flumearchiving.com/?p=52 He is focused on more affordable transfers for archives. I think both folks offer the XT-20 higher-resolution machines. I think there are two companies in the Nashville area that can handle that, but I don't have any experience with either.
